Anyone who knows me, knows that I am not much of a daredevil. In fact, I'm pretty consistent in my actions. I'm not one to do things on a whim and get anxious when my schedule is interrupted. I just feel like I am a much happier and productive person when I'm on a consistent schedule. I have no problem eating the same thing everyday for breakfast (cereal with a banana) and a few select items for dinner. I mix up my lunch with soup or salad everyday. Sometimes a homemade wrap if I have time on the weekends to make some vegan egg salad or mock tuna salad to grab and go in the mornings.
But not this weekend. I was feeling daring this weekend. Friday night I made Protein French Fries from my girl over at Chocolate Covered Katie and accompanied them with some balsamic ketchup. And Sunday? Well Sunday I went crazy with some Avocado & Scallop Ceviche. Mmmmm. Yummy! The only thing I would change? I would have used less salt. Other than that? It was delicious!

It has all of my favorite things... avocados... scallops... tomatoes... yum! So what about you guys and gals? Are you a last minute person or do you feel more in control with a schedule?
